Item 61 on the list: "A Castle made of sugar, and everything therein made of sugar" was created using Delights for Ladies recipe # 43 "Casting of Sugar in partie moulds of wood." I interpreted this to be a similar technique as that used to create the sugar eggs sometimes seen at Easter. This item is designed solely for visual appeal, it is not intended to be eaten. The gold leaf on the roof is NOT 24 carat.
1 cup granulated sugar to
1 t water (a few drops of liquid food coloring may be added if color is
desired.)
increase as needed (5 cups sugar and 5 t water...) the desired consistency
is sugar that is damp enough so will hold its shape, but is not soggy!
Mix thoroughly, pack into moulds and unmold carfully. Let dry several hours to several days depending on the size and thickness of your project.
Pieces may be joined with royal icing.
2 egg whites
1/2 t cream of tartar
4-6 cups confectioners sugar
beat for 7-10 minutes till very stiff (a Kitchnaid mixer will survive this.)
