<6> A Black Hedgehog (My translation)

A black hedgehog even so to make a black hedgehog, you must have a pound of ginger which you must wash and trim well that nothing unclean remains an you should sweat it in a pan. And let it cool that it dries. And grind/pound him small, and add cinnamon and cloves and sugar thereto. And mix/beat it together and make a real hedgehog therefrom and when he is ready, so should one stick him with cloves that should be his coat (prickles), and a golden nutmeg give in his mouth, that is for the hedgehog healthy.

A black hedgehog (my re-creation)

1 lb fresh ginger root
1/3 cup sugar
1 t cinnamon, ground
1/2 t cloves, ground
50 whole cloves for the prickles

Wash and peel your gingerroot. TIP use a small sturdy spoon to scrape the skin off and you minimize the risk of cutting yourself; use a small knife for any hard to reach bits. Cut ginger across the fibrous grain into slices (to minimize stringy bits in the final product) and cut into rough cubes. Place the ginger in a large skillet and sweat it in 1/2 cup water. (The color and texture will change from a raw potato pale yellow to a translucent beige.) Sweat, stirring frequently, till all the water is gone. Let ginger cool in the pan. Place 1/3 of the ginger in a food processor and grind till smooth, repeat with the rest 1/3 at a time. Finally combine and add in the spices and sugar. Process and knead to combine.

Wet your hands and shape form into a hedgehog shape. If necessary let it dry overnight.

Insert the cloves into the rounded part of the hedgehog's back, leaving the face free.

For presentation place a gilded whole nutmeg in his mouth "for that is healthy for a hedgehog."

NOTES: The book's translation into modern German contains an error. The original Handschrift calls for cinnamon, cloves, and sugar. Trude Ehlert mistakenly omitted the sugar in the modern German. I was working from the Handschrift and using the modern to check myself, noticed the omission, and included the sugar in my re-created version.

I am not sure how a gilded nutmeg (or any other nutmeg) could be "healthy" for a ginger/spice hedgehog, but I included the quote as it is in the original.
