<7> Another Hedgehog (made of figs) (My translation)
And another hedgehog, even so, but another hedgehog so: take thereto a pound of figs and wash the flour (bloom) therefrom and let them dry, and hack them small and grind/pound them with good spices in, and do saffron thereto so it becomes red and the sugar you shall not forget, when it is pounded small. So mix/beat it together and make a hedgehog therefrom and gild him well with saffron, and take cloves that should be his coat (prickles) and a fig give him in the mouth.
Another hedgehog (my re-creation)
1 lb figs
3 T sugar
few threads saffron
seeds from 3 cardamom pods
large pinch cloves, ground
50 whole cloves for his prickles
Wash the figs to remove any powdery bloom and let them dry. Cut off the stems, and cut the figs into quarters. Place 1/2 the figs into a food processor and process till smooth. Set aside and repeat with the remaining figs.
In a mortar and pestle grind the saffron with some of the sugar and add to the figs. Repeat with the cardamom, and again with the ground cloves.
Process again till smooth. With damp hands shape the mixture into a hedgehog shape.
Insert the cloves into the rounded part of the back to simulate prickles.
For presentation give him a fig in his mouth.
NOTES I was only able to obtain 8 oz fresh figs, so I used an 8 oz package of organic dried figs for the remainder. The fresh figs were very moist, to the point of being a thick soup; adding the dried helped the consistency, but the mixture was still too wet, so I let it sit overnight covered with a paper towel. It was still very soft to work with. Perhaps using only dreid figs would be a solution.
