Pickled Red Beets

Pickled red cabbage
4. take a red head of cabbage/ toss it in a hot oven/ that one has baked
bread (in)/ when it is well steamed/ so pull it out and let it become
cold/ cut the burned away/ cut it in quarters/ put it in a a ___ or a
small barrel/ put a little fennel betwee/ pour half wein and half vinegar
over it/ cut also red beets/ that were cooked previously/ and cold are
/ thereto/ put a bit crushed horseradish thereunder/ so it is good and
welltasting.
Orange juice sauce
5 Saur Pomeranzen Safft/ Wenn man die Pomeranzen außdruckt/
macht man den Safft an mit Zimmet und Zucker/ kalt zu dem Braten gegeben/
ist gut und wolgeschmack.
Sour Pomeranze (bitter orange) juice/ If one (juices) the
pomeranzen/ make (season) the juice with cinnamon and sugar/
(as a) cold accompaniment to the roast/ is good and
welltasting.
Brown Mustard Sauce
12 Braun Senff mit lauterm Essig angemacht/ ist auch
gut.
Brown mustard made up with clear vinegar/ is also
good.
