Caerthe's Cooks Guild

Caerthe's cooks guild is designed to further the art and science of cooking in the Barony of Caerthe (Denver, CO.)  Usually one meeting per month is facilitated by Mistress Katherine Holford, the guild head.  Meetings are based around a topic, always  include discussion, often there is a hands-on activity, sometimes hand-outs are available, and we always share food.  Garb is preferred, but not required. Experience is not necessary.
Newcomers are ALWAYS WELCOME!

Sunday, December 14, 2007 Cookies and Caroling. Due to inclement weather and the current crud du Jour the meeting consisted of Mistress Kate and Ysa. Im sure they had a lovely time.

Sunday, November 11, 2007 Goose and quail! We had a lovely day for a very tasty meeting. Personally, I was a little disappointed in the goose, the skin was not as crisp as I usually manage, and the meat was a bit tougher than normal as well, but it was still very rich and yummy. The meal was rounded out by both a fruit and a bread stuffing and a delicious sauce from Mistress Kate, assorted cheeses to keep us from starving while the bird roasted from Lady Tanwen, a cool and creamy cucumber salad from Lady Kseniya, and this amazing pan roasted quail with an apple sauce (not applesauce but grated and spiced apples) that Ysentrude created - YUM. Oh I also was able to test the peas in and out of the pod I plan to serve at 12th night. Photos soon.

Sunday, October 21, 2007 Well, I missed this meeting cause that morning the weather was HORRID, though of course, by just after noon it had cleared. Oh well. Im sorry I missed it. Im certain Mistress Kate had a wonderful pot of stew for those who were able to attend.
Sunday, September 30, 2007 A small but very productive meeting of harvesting the wonderful apples growing in Furukusu and Branwens yard. My understanding (yes, I missed this one) is that 4 gallons of applesauce were made. GOOD JOB.
Friday, August 17, 2007 The Caerthen Cooks Guild will meet Friday, August 17, for an evening of good food and good company at the home of Mistress Katherine Holford, 910 Milwaukee Street. The evening will begin at 7:00 p.m. Please bring something to grill or a side dish or dessert to share, and a story or song, if you wish to entertain the company. I will have a grill available as well as a fire pit. Garb is preferred, and bear in mind, this will be (probably) a hot August evening.
Sunday, July 15, 2007 The Lunch at Mr. Panda started a bit late, but the food and the company was worth the wait. As usual H-Mart was filled with wonderful goodies, bargains and some surprises. I picked up ginger to candy for 12th night, and had my first taste of fresh Lychee. MANY THANKS to Shoshona, her husband Hayashi and her in laws Richard and Suimei who provided explanations and information on the sometimes strange ingredients. With the addition of 2 guests from Dragonspine, and our companions from the Caer Galen cooks guild we had 14 culinary explorers on this field trip.

SATURDAY, June 16, 2007 was a two-part meeting, starting with a trip to the local Cherry Creek Farmers' Market, where we purchased the many wonderful ingredients for our lunch. Following the farmers market visit, we used our purchases to prepare a medieval meal in Mistress Kates backyard. Using her firepit and tripod set up, as well as beautiful and functional cooking pottery the smoke made for a hot time in the old yard.

Everyone provided ingredients and some labor, William kindled the flames, Bruyere tended the apricots and root veggies, Kat sliced and Richenda toasted the bread, Gwen Cat prepped the veggies, Tanwen provided several cheese just right for that toasted bread, and Rosza brought the yummy apricots for simmering. ( think I got it all, if not, email me, Ill FIX it. :-) THANK YOU to Richenda for providing the photos!

I know I forgot some of what we prepared and enjoyed but it included lamb on skewers (with a yummy sauce on the side) grilled sausages, toasted bread with cheeses, eggs cookd in a spoon, root veggies cooked in the coals (should have waited for ashes) apricots stewed in wine, varrious cookies and a molded cake

Sunday, May 6, 2007 What a nice gathering. The food was ample, the woodruff heady, and the friendship warm even if the weather was a bit too chill to be outside, except for one fur-coat wearing guest.
Sunday, April 22, 2007 Was a field trip to Penzey's Spices in Arvada ( 7511 Grandview Ave. ) What a wonderful trip, and a great way to spend a beautiful Sunday afternoon. Penzey's staff were all very helpful, and gave everyone a
sample of rosemary to enjoy. The store is soliciting recipes from their shoppers, and the Guild will discuss a group submission at the May meeting. We also took a group picture, which I hope will be posted soon on the Guild website.

I'm remembering the following people:

Did I miss anyone? We seemed to fill up the store!

FRIDAY, March 23, 2007 Caerthes Cooks guild provided a wonderfully ample spread for the monthly Dinner and a Tourney. I know Im forgetting someone, but here is what I remember of the food and who brought what:

We had about a dozen full sized tarts from Arwen (and Rivka and Lijbet, I understand) (mushroom and cheese, brie, and um... emberday?) (yes, Emberday, very appropriate!) we had mini cheesecakes from Mika, middle eastern meatballs with pine nuts from Ursula who also had something rice (saffron and almond rice), with almonds?, a huge station of udon noodles cooked to order by Furukusu and Branwen (YUM! and very popular,) we had a bowl of shrimp and sausage alongside this yummy grain dish from Emma who also brought THREE luscious peach pies, we had more bread and some yummy macrows from
Julianna and Bruyere as well as a version Domingo had made (I don't know who's version I had, but it was delicious!), my big roaster of middle eastern meatball stew, Ksenyias Honey cake, bread and cheese, Kate brought a very popular fresh herb butter, pretty natural dyed eggs (the pink ones were the favorite, for some reason) and mustard sauce, Turkey pie, AND made some waffles, Rivka? brought fritters with squash and cumin (allspice, I think) or were those from Richenda???? (Richenda's Fritters - both she and Kseniya couldn't make it but sent food anyway) Kestrel brought chicken curry.
Of course we also had a baronial birthday cake (perhaps courtesy of the Baron?), EOB contributed home baked breads (both brown and soda) and a tray of assorted baklava, Ailea brought a chocolate and vanilla Angelfood cake with strawberries and chocolate sauce, gosh and I know Im forgetting something. and everyone ate and ate and ate and there were still leftovers. Oh there was Lemonade too! (And everything was delicious! and I'm still not sure we have actually listed everything - there was an incredible selection.)

In the contributed category we should also not forget Jethro and Bobby who brought disposable ware (plates, cups, napkins,) and David and Michael who schlepped! (Thank you all!)

Aint it good to know there was enough food.

Sunday, February 25, 2007 We had a lovely Winter afternoon of wine tasting at the Bookcliff winery tasting room in Boulder. We sampled White Merlot and Red for White wine drinkers, Syrrahs and many more. My favorite, a cabernet port that was incredibly good with these blackberry notes I just loved. We also had various cheeses, and the chocolates - Oh those chocolates. I think the Dark chocolate with a pinch of cayenne was the most unusual, but eyeopening tasty. Next time you are there, get a fire flower.

Sunday, January 28, 2007 People attending the January meeting:

We discussed many ideas over lunch, such as: February - a joint field trip with the Caer Galen Cooks' Guild to the Tasting Room of a one of our olorado Vineyards.

March: Lord Robert was delighted we wanted to cook for the "March Tourney with a Dinner". So Friday, March 23, guild members will donate a crockpot or other container of food. Bread, cheese and similar foods would also be good.

That pushes the long-anticipated trip to Penzey's Spice Shop to April. Mistress Arwen will coordinate this meeting, which will include a class on the various spices, period spice mixes, etc.

Future ideas: Visiting Haystack Mountain Goats dairy farm, Mistress Hinoki (Rowen) providing a Japanese Tea Ceremony, brewing, outdoor firepit cooking (possibly a weekend campout); practicing period table setting, carving and service, as instructed by period manuscripts.

Other previously suggested meetings themes: preparing herbal/cooking
recipes for largesse, outside evening (summer) meetings featuring Russian and/or Mongolian, middle-eastern, Indian or Japanese foods, or a Japanese Snow-Viewing, Russian easter-egg decorating, roasting and carving geese, and what sauces and sidedishes would be served with geese in period, choosing and redacting a recipe from period sources, and the long over-due Fritters Workshop II.

Let me know if I've forgotten something, or if other ideas come to mind.
